🐝 A Little History

The Bee’s Knees dates back to the Prohibition era in the 1920s, when alcohol in the US was… let’s say, questionable at best.

Bootleg gin was often pretty rough, so bartenders started getting clever. They used strong flavours like lemon and honey to mask the harshness and make the spirit actually drinkable.

So essentially… it was a clever fix for bad booze that turned into an absolute classic.

🍯 The Bee’s Knees

Bright, zesty and effortlessly smooth, the Bee’s Knees is a beautifully balanced cocktail that lets citrus and sweetness dance together.

Fresh lemon juice brings a sharp, lively edge, softened by silky honey syrup that adds warmth and depth rather than just sweetness. The gin (or in your case… that gorgeous limoncello gin 👀) carries it all, giving a clean botanical backbone with a sun-soaked citrus lift.

The result?
A drink that’s refreshing, slightly floral, and dangerously easy to sip. Light, elegant, and just the right side of indulgent.

🍸 Ingredients

  • 50ml Limoncello Gin,
  • 20ml lemon juice,
  • 20ml honey syrup,
  • 1 egg white or 4 drops of miracle foamer, Shake WITHOUT ice, Add ice and shake again, Strain into a martini glass, Carefully top up with lemonade. . Garnish with a lemon wheel and rosemary sprig.


✨ Method

  1. Add the limoncello gin, lemon juice, syrup and egg white to a cocktail shaker.

  2. Shake WITHOUT ice.

  3. Add ice and shake again to chill
  4. Strain in to a martini class

  5. Top up wth lemonade
