A Spring Twist on a Masterclass Favourite
If you joined us at the Valentine’s Cocktail Masterclass, you might recognise this one. Our much-loved Two in the Pink has had a little seasonal refresh and has blossomed into the Spring Spritz.
This version celebrates the soft floral notes of our Blush Edition Gin, distilled with locally foraged rosehips, smooth vanilla pods and a hint of strawberry. Paired with elderflower liqueur, fresh lemon and a touch of vanilla syrup, the result is light, bright and beautifully balanced.
The real magic happens when the hibiscus ice begins to melt, slowly releasing its colour and turning your drink into a delicate pink bloom in the glass. A splash of pink soda, lemonade or prosecco lifts everything into an elegant, sparkling spritz that’s perfect for longer spring days and garden gatherings.
It’s floral, refreshing and just a little bit theatrical, exactly how we like our cocktails at Devil’s Dyke Distillery.
🌺 Prep Ahead
Hibiscus Ice Cubes
The night before your gathering, add dried hibiscus petals to an ice cube tray. Fill with water and freeze overnight.
These beautiful cubes slowly release colour and a subtle tart floral note as they melt.
🍸 Ingredients
- 50ml Devil’s Dyke Blush Edition Gin
- 25ml elderflower liqueur
- 15ml vanilla syrup
- 20ml fresh lemon juice
To finish
Pink soda, lemonade, or prosecco
Garnish
Hibiscus petals or rose petals
✨ Method

Fill a cocktail shaker with ice.

Add the Blush Edition Gin, elderflower liqueur, vanilla syrup and fresh lemon juice.

Shake well until chilled and beautifully blended.
Place your hibiscus ice cubes into a chilled martini glass.
Strain the cocktail over the cubes and watch the colour begin to bloom as the hibiscus melts.
Top with a splash of pink soda, lemonade or prosecco for a light sparkling finish.

Finish with a sprinkle of hibiscus petals or delicate rose petals for the ultimate springtime serve.
